About Me
Creating amazing food and using the best of seasonal ingredients is what I love to do.
I always knew I wanted to work with food, and so straight after school I completed a commercial cookery apprenticeship.
Fast forward 20 years and today I’m living my dream with owning and managing All Courses Elite Catering.
In between I’ve worked at the Sydney Hilton hotel group, traveled extensively overseas (lapping up new food and restaurants along the way), and held the position of Executive Chef in multiple UK restaurants. Upon returning to Australia I took up the Executive Chef position at the The Grand National Hotel where I was responsible for all menus, budgets, staffing and overall operation of the kitchen and front of house.
In addition to the private dining, canapè functions, weddings, birthday parties and corporate events that I cater for, I also contribute recipes to various magazines and assist with styling for food photography, cookbooks and television cooking programs.
Rounding it all out, I have taught commercial cookery to apprentice chefs at TAFE NSW, and have lived and worked in the Philippines in the position of Director of Studies, training local teachers and teaching students.
